HAVANA - According to official government sources, the animal known here as the cuy (pronounced cooee) has so many useful attributes that a Society of Cuyculturists has been created.

Although some people consider it ugly, since it looks like a giant guinea pig, it has a protein-rich meat and is easy to cook, with a few herbs and vegetables.

The cuy, which came from the Andean countries, was introduced to this island only five years ago, but it was not until 1996 that production began in earnest. From 335 cuys in that year, the total now is about 2,000.

So far, there is no great demand for it on the black market.
